This kitchen collab is turning Bo.lan into a Phrae-style larb shack
Straight from the north.
Fancy dishes from Nan and Phrae you won’t find elsewhere? Head to Bo.lan on Oct 14, when cookbook author and photographer Austin Bush takes over the kitchen and turns the place into a northern-style larb shack.
Bush is joining forces with chefs Dylan Jones and Bo Songvisava to whip up some of the northern Thai recipes from his James Beard Award-nominated cookbook “The Food of Northern Thailand,” as well as a handful that didn’t make it in the book. The menu will focus on meaty dishes and incorporate spices uncommon to us city slickers, like mouth-numbing makwan. Seasonal ingredients like bamboo and mushrooms will also make an appearance.
You can get your fill of northern food and then some, as B3,500++ buys you the dinner and a signed copy of the cookbook. There will also be alcohol pairing options and a yet-to-be-revealed but potentially very cool dessert made in collaboration with bean-to-bar chocolate specialists Kad Kokoa.
