This May 17-19, The Mandarin Oriental will welcome arguably Peru’s most renowned chef, Gaston Acurio of Astrid & Gaston in Lima, who is credited with transforming Peruvian cuisine into the international fine-dining sensation it is today. From 7pm nightly, chef Acurio will present some of his signature dishes at Lord Jim’s restaurant in the Mandarin Oriental, with the likes of his famed ceviche afrodisiaco (lime-cured king crab, sea urchin, clams and scallops) available from the a la carte menu. For the full experience, though, you'll want to try the 5-course tasting menu at B4,120 net per person or 7-course at B5,650 net per person.

On May 17, chef Ayo Adeyemi of Singapore's Tippling Club teams up with Freebird's chef Top Russell for a 12-course menu (B2,850). 5:30-11pm.

On May 18, Le Meridien Bangkok's Bamboo Chic Bar offers a tasting of eight Chilean and Argentinean wines, alongside almost 30 small plates. Top wineries Concha y Toro (Chile), Argento and Catena (both Argentina) will supply great Malbecs, as well as Chardonnay and Pinot Grigio whites. To go with, nibble on chef Marco Cammarata's ocean-fresh, fruity ceviches and Latin tapas dishes. B1,500 per person, 7:30-9:30pm.

The people behind Wine Garage, the online artisanal wine shop, will join forces with Jordan Cortes, the head sommelier at L’Atelier de Joel Robuchon, and The Cookhouse Number 9 for an afternoon workshop on May 22 dedicated to food and wine pairing. For B5,500 you’ll taste a variety of bubbles, whites and reds with Cortes offering guidance on complementary and contrasting pairing possibilities. Chef Vitor Matos of the one-Michelin-star Antiqvvm in Porto, Portugal, visits Il Fumo to cook alongside head chef Nelson Amorim on May 22-23. For two nights only, the two chefs will present six-course dinner (B3,800, extra B1,300 for wine pairing) featuring modern interpretations of Portuguese cuisine with personal touches. Expect dishes like meia desfeita (chickpeas with salt cod), and hake and clams a Bulhao Pato (in garlicky broth).

On May 23, chef Andrea Ortu of La Bottega Di Luca and chef Nino Scognamillo of La Casa Nostra team up for a six-course dinner (B2,700), featuring with Nals Margreid's south Tyrolean wines.

Italian chef Umberto Bombana, of Hong Kong’s three-Michelin-starred 8½ Otto e Mezzo Bombana, will take over the kitchen at The Sukhothai’s old-school La Scala restaurant on May 23-24. Hailed as the “king of white truffles,” chef Bombana’s Italian restaurant is the only one outside of Italy to hold three Michelin stars and was also voted No.13 in Asia’s 50 Best Restaurants 2018. For lunch and dinner, he’ll prepare extravagant dishes like white asparagus and Oscietra caviar, warm langoustine over a salad and egg emulsion, and tagliolini with butter, parmesan and black truffle fondue.
