Japanese "beak-to-tail" eating via Hong Kong. 

Multi-label fashion store turned restaurant and bar, Siwilai City Club, will welcome Canadian chef Matt Abergel of Hong Kong’s cult yakitori restaurant Yardbird into the kitchen this May 31.

Since opening in Hong Kong's Soho district in 2011, Yardbird's "beak-to-tail" approach to charcoal-grilled chicken and Japanese-inspired cocktails to match has earned it plaudits from the likes of Asia's 50 Best Restaurants as well as a reputation for lengthy customer waiting times. Late last year, the restaurant opened up in a larger space in the lively Sheung Wan district. 

Chef Abergel, who is also head chef of Hong Kong-based seafood restaurant Ronin, previously worked at chef Masayoshi Takayama's Masa in New York and at Hong Kong's Zuma, where he became an authority on Japanese charcoal-grilled chicken. His visit to Bangkok is in support of his upcoming cookbook to be published by Phaidon, Chicken and Charcoal, which is said to be the first comprehensive book about yakitori to be published in English.
