Meet the Makers

Khunpol Issara, Issara Estates Winery
“We’re a family winery in Khao Yai. My parents and siblings are involved in every process of the winemaking. We grow vines on 30 rai of land and produce around 35,000 bottles each year—small for a winery. We grow shiraz, chenin blanc and cabernet sauvignon grapes and are taking steps to become a sustainable, organic vineyard.”
Get this: Issara Estates Shiraz 2012 (B1,200).

Chef Clement Lourdin, Cagette Canteen and Deli
“I have a background from France in making charcuterie, and the general manager here at Cagette, Stan Bokanowski, really wanted the food to have a homemade, French taste. So why not make our own? Right now I produce coppa ham—a traditional Italian cold cut—and several other meats.”
Get this: Homemade lonzo (cured pork loin, B60/100g) and duck rillette (B180/100g).
