The crew behind Zao and Saole just won't stop. 

First opening at EmSphere last year, Zao Zen is the brainchild of Nutthida “Eve” Palasak, and she’s made a splash on the Bangkok food scene by putting life into Isaan fare. The newest iteration of Zao Zen will be found at Siam Paragon. 
 
From Saole to Zao Larb, this crew has been changing the Isaan game with adherence to tradition and a little bit of fun. The EmSphere location made noise with customers being able to watch fresh noodles being made, and providing Bangkok mall-goers with artisan Isaan noodles with a little spice and a lot of heart. 
 
Favorites include Ubon coconut milk noodles and the phad Phimai, and the new space is set to include a live seafood tank. Zao Zen announced on social media that the new space would be opening in November on the ground floor of Siam Paragon.

Eve is the darling of Isaan cuisine in Bangkok, having spent six years selling tractors in her Ubon Ratchathani home before opening Zao, where the city got a taste of rare Isaan cuisine with ingredients shipped in from up north. 

Earlier this year, Zao Larb merged with Zao Ekkamai to turn its old property into Saole, a high quality seafood joint that combines multicultural flavors and culinary techniques commonly found in mountainous and seaside communities, all inspired by Neef’s trip to the markets of Madrid.
