Seasonal menus of refined Thai dishes made with locally sourced ingredients: that’s the name of the game here, as made evident by the name R-Haan which translates loosely to “sustenance” or “food” in Thai. Chef Chumpol Jangrai’s spacious, regally decorated restaurant looks across the country for culinary inspiration, folding goat meat from Thung Kru district, Samut Prakan Province. River prawns from Bang Phrae disctrict, Ratchaburi Province. It’s a great way to taste Thailand’s bounty. The restaurant was one of the earliest venues in Thailand to earn a second Michelin star, making Chef Chumpol one of the city’s most recognizable faces in fine-dining in the process. The concept of the menu follows an old Thai proverb, “nai nam mee pla, nai na mee kao” (where water flows, fish aboud; where fields lie, rice thrives).

Chef Garima Arora is a star on Bangkok’s dining scene (even more so after notching her second Michelin star in 2023), and her food is built on a mix of heritage cuisine and bold, innovative dishes. Found at an unforgettable 60-year-old Thonglor baan ruen-style building, the restaurant is heavy on making bold, ingredient-forward decisions that set the standard for modern Indian fine dining in Bangkok. Whether you’re going in for the tasting menu or stopping in at the lounge for a la carte, the food here steers hard into cutting-edge, science-based gastronomy, but there are timeless Indian flavors in every dish.

Only on the city’s dining scene since 2020, the eponymous Italian-Argentine chef Mauro Colagreco and team built the lush space inside Capella Bangkok on the river to become one of the city’s most talked about restaurants. Helmed by chef Davide Garavaglia and crew, Côte will be on Bangkok fine-dining lists for years to come. On the menu, diners find a host of signature dishes made from seasonal produce—so each visit is different. At Côte, everything starts with the ingredients—fresh and local where it’s needed, careful and chic where it matters. When Capella blew into town, it brought fresh life into the city’s riverside dining scene, and Côte’s perch atop the hotel is a big reason why.

This 120-year-old, five-story shophouse in lively Sampeng represents the heritage of a five-generation Thai-Chinese family and their historic medicinal shop. Glass jars with fermenting ingredients line the shelves on the way to a wooden elevator originally used by Chef Pitchaya "Pam" Utarntham's family to transport herbs to upstairs. Each floor of the shophouse has a story to tell. Pam caters to all five senses in her 20-course dinner, from the splashy 14-day five-spice-aged duck to the crab curry with a mud crab roe emulsion—both seen on Netflix’s recent Chef’s Uncut miniseries.

Headed by Prin Polsuk, formerly Nahm and Mandarin Oriental’s Sala Rim Naam, Samrub Samrub Thai is a place for people who want to take Thai food seriously. The space serves two rounds— and it’s not always easy to get a seat—at 5:30 and 8pm featuring a friendly atmosphere and new menus that keep diners coming back again and again. Attempts at elevated Thai food can often be a little stuffy, but this is a spot that doesn’t compromise on bold flavors and, occasionally, the spicy heat—not fine-dining heat, real heat. Here, you’ll find simple, unpretentious dishes that require a high degree of care and creativity.

But you’ll always find the signature khao kluk kapi, plump river prawns served atop organic brown rice mixed with aromatic shrimp paste. The restaurant also got a big makeover this year, including a massive ceiling installation that sees over 1,000 tiny glass tubes hoisted above the main dining area, as well as a darker, more open-plan layout.

Despite its discreet Dusit location, Chim by Siam Wisdom isn’t a secret anymore. After catching Bangkok food circles off-guard with its Michelin star in 2018, the restaurant is now firmly planted on the dining map, thanks to chef Thaninthorn “Noom” Chantrawan. His tasting menu, “kim han ta phu ree,” aims to showcase the complexity of Thai cooking, with attention given to the tiniest detail, especially the provenance of the ingredients. You will find regular menu hits drawn from ingredients on hand that day, like tui dua, a southern staple soup that takes the freshest seafood available and mixes it into a creamy coconut soup.
