What’s Khao Chae?
A set of khao chae features rice soaked in cold, flower-scented water with a few delicate side dishes. Usually consumed in summer, this royal Thai specialty requires great attention to detail: preparing the rice to a just-cooked level and rinsing the additional starch out before soaking it in flower and candle-scented cold water. Traditional side dishes include look kapi (shrimp paste balls), caramelized salted daikon radish, stuffed shallots, pork or beef floss, sweet seasoned fish meat and stuffed green chili wrapped in egg net. Carved vegetables also accompany the set.
