Swedish chef Björn Frantzén — the three-star Michelin chef behind the eponymous restaurant empire the Frantzén Group — reimagined the Nordic dining scene in Bangkok with the opening of Villa Frantzén. The changing tasting menu features modern Nordic cuisine with subtle Asian touches. The base six-course menu allows diners to pick one of two options from each course, which includes dishes like cured Norwegian salmon and beer-poached king crab, foie gras wontons, and sea buckthorn sorbet. You can also pay extra for supplementary sides, as well as expertly curated beverage pairings.

The name of one-Michelin-starred 80/20 refers to the ratio of seasonal Thai ingredients and the chef’s own creative spin. Keeping true to its name, the signature tasting menu changes according to the local produce, although diners can expect approximately 15 small bites. The menu opens with an assortment of snacks, followed by the typical appetizers, main courses, and dessert. Signature dishes included Australian Wagyu tartare dok jok, rabbit khao soi, and “Thai-prese,” a Thai reinterpretation of Caprese salad featuring tofu and horapha basil. A drinks pairing is also available for an additional charge.

Adhoc BKK’s 11 tasting courses of contemporary Thai cuisine is a genuine Thai farm-to-fork fare, highlighting ingredients from dedicated local farmers across the region with dishes that change according to the season. The private dining setup means that diners can enjoy their food in an intimate setting featuring a makeshift fireplace and an open kitchen, although it should be noted that they may take more than one reservation per night depending on availability. Past menus have included dishes like lon kem bak nut, satay, and sua nuea.

Culinary power couple Top Russell and Michelle Goh’s fine dining brainchild offers a tasting menu (five or eight courses) that expertly pairs European techniques with Asian flavors. The meal includes a variety of snacks to begin with, as well as both hot and cold starters. Mains have included options such as roasted quail and beef short ribs that have been braised for 48 hours. The sourdough brioche with homemade shallot butter melts in your mouth, while the signature Mia’s cereal bowl is the perfect dessert to round off with. Mia’s is also one of the few fine dining restaurants in town that also offers both vegetarian and vegan tasting menus.

As the original home of Bangkok French fine dining (open for business since 1958), Le Normandie presents two Michelin-starred French haute cuisine in old-school glamor surroundings. Diners can opt from one of four tasting menus, or have a bit more freedom with the à la carte. The expertly prepared dishes range from roasted Challandais duck to dover sole meunière to the signature pan-fried blue lobster medallion. Dessert lovers will be enchanted by the assortment of classic French sweets, including a decadent black truffle soufflé, and crêpes suzette flambéed with Grand Marnier.

Juksunchae

Bangkok’s very first (and still one of only a few) Korean fine dining restaurants, Juksunchae takes traditional fare and modern techniques to create a totally new gastronomic narrative. The 12-course tasting menu reflects Executive Chef Henry Lee’s Korean heritage by paying homage to traditional Korean dishes, while also presenting his own personal spin on classics. Kimbap is reimagined as a trio of amuse bouche tartlets that feature lobster, caviar, and yukhoe. The all-time favorite bibimbap is made with a creamy sea urchin custard, caviar, and rice—all tied together with a white kimchi sauce.

Modern German fare inspired by the owners’ (twin brothers Thomas and Mathias Sühring) upbringing is the name of the game at two Michelin-starred Sühring. The setting in a generously portioned mid-century home round the back of Yen Akat Road retains its residential charm, but also adds a striking open kitchen. The nine-course tasting menu introduces diners to what German haute cuisine can (and should) be, thanks to dishes like maultaschen dumplings filled with codfish and caviar, a traditional rinderroulade made with Simmenthal beef and red cabbage, and eggnog (or eierlikör) with pralines. Diners can also pay for supplements such as currywurst, and spätzle made with truffle and Allgäuer mountain cheese.

Ojo

While Ojo is best known for its views (located on the 76th floor, it’s the city’s highest restaurant), its menu is also just as spectacular as the surroundings. One of the city’s few Mexican fine dining restaurants, diners can expect authentic Mexican flavors across the expansive menu. The raw section includes a spicy seafood tostada and hand cut beef tenderloin tartare, while the cold and hot appetizers range from Wagyu ribeye asada tacos to coconut ceviche to, of course, their signature Ojo guacamole made with crab meat and ikura salsa. Mains are meat-heavy, with highlights including tiger prawns in a chili garlic butter, and confit duck tamales.

With Gaa, Chef Garima Arora became the first Indian woman to receive a Michelin star. The restaurant’s produce-centric approach, as well as flavor combinations and course hierarchy, fly in the face of classical convention. The main calling card is the rice n’ cola: stir-fried rice with Indian clarified butter and green pickled mustard, topped with tamarind cola rose syrup. Past dishes have included unexpected delights such as a betel leaf half coated with chocolate, half sprinkled with fennel powder, and a savory fish khanom la made with poached grouper, pungent mustard seed and sweet caramelized milk skin. A vegetarian menu is also available, and a vegan diet can be accommodated with prior notice.
