Will it get three Michelin stars too? We don’t really care

We don’t know much about it yet, but advance reservations have already opened for Dutch Chef Richard van Oostenbrugge’s (of two Michelin-starred Bord’Eau Restaurant Gastronomique and trendy fine-casual establishment 212 Amsterdam, both in in the Netherlands) first overseas endeavour, and it’s gonna be taking over the same space once occupied by Joel Robuchon Restaurant in Singapore.

Come December (no exact date yet) this year, fine-casual restaurant Table65 (referencing our country code) will welcome its first customers. The design of Table65 will be inspired by Oostenbrugge’s 212, which has one big chef’s table as the centerpiece, where the cooks work from and get to freely interact and entertain diners, as if in a home kitchen. The 31 counter seats will be the prime vantage spots to catch the chefs in action, while private booths and a dining room will also be available for guests who prefer their own company. There’s also a separate 33-seater bar area which serves up post-dinner drinks and desserts.

Offering contemporary European cuisine with international influences, one of the menu items will be chef’s signature ‘Os a Moelle’ Veal tartare with smoked herring, bone marrow and cockles. Meanwhile, new creations include items like the locavore-ish barbecued chicken skin with smoked eel cream and local vegetables, and the modish langoustine poached in duck fat with dashi albufera sauce topped with freshly grated coffee beans.

For desserts, Oostenbrugge will be bringing to Singapore a variation of one of the most Instagrammed items in Amsterdam, his famed Green Apple dessert that takes on a salted caramel and walnut twist here.

Other than the cuisine and drinks, something unique to expect is the use of technology in the presentation of the food. Apparently, there’ll be levitating creations and visual projections on the dining plate, something that’s in line with Oostenbrugge’s idea of injecting fun into fine-dining.
