Verdict: These light and fluffy pancakes taste super buttery (in a good way), with crisp edges, a soft interior and a nice golden finish. They’re light and fluffy, but still have some heft to them—just perfect to hold up to the glossy blueberry jam, yet still porous enough absorb the melted maple butter.

Verdict: More innovative than most, this ultra-thick pancake is undeniably light and fluffy like souffle, with just the right level of sweetness—which is great if you want to pile a knob of butter, fresh whipped cream and a healthy dose of maple syrup on top (though you might need to ask more for the latter to cover up the eggy taste of the pancakes). If it’s a traditional pancake you’re after, however, this is not the one.

The pancake is light and airy, yet with a custardy interior, almost like a cross between pudding and souffle, but unfortunately it suffers from the same eggy taste as the other souffle contender on the list and is similarly not your classic authentic pancake.
