Progressively Innovative: KINKI reimagines Japanese cuisine
East meets West and tradition gets a twist at this Japanese restaurant.
To say that KINKI transgresses Japanese cuisine would only be partially accurate — the restaurant fully respects the good old times while embracing what’s ahead, as it marries traditional Japanese ingredients and dishes with modern culinary techniques.
At KINKI Japanese Progressive Dining and Bar, the spirit of Japanese culture very much imbues every aspect of the dining experience, from the meticulously crafted menu to the vibrant atmosphere. The commitment to innovation is evident in their menu, where familiar flavors take on exciting twists.
Most are advised to start their journey with the unagi crispy skin, comprising succulent Japanese eel with its skin achieving just the right level of crispness through a meticulous charcoal grilling process. This masterpiece sits atop fragrant truffle sushi rice and nori, offering a delightful textural and flavor contrast. Enhance the experience with three delightful sidekicks: crispy Japanese scallions, crunchy Arare puffed rice, and Aonori seaweed.
The oyako risotto with poached egg and negima is a captivating fusion of Japanese and Western influences. Japanese rice is stir-fried with shiitake mushrooms and onions, infused with the aroma of the restaurant's homemade oyako soup. The result is a comforting amalgamation of textures, culminating in the perfect balance of soft and chewy rice. Atop this lies a soft-boiled egg, alongside grilled chicken and Japanese scallions.
The kaizen taco and uni caviar is a playful twist on the classic Mexican taco, featuring bluefin tuna, hamachi, salmon, and Tobiko eggs, all brought together by a special sauce. The vibrant flavors are housed in crispy Vietnamese spring rolls, crowned with the luxurious touch of sea urchin caviar sauce.
You’d be forgiven for not immediately recognizing this next dish. The aptly-named Mist-ery is shrouded in a light veil of mist upon arrival. Unveiling this theatrical presentation reveals a thick salmon roll, sourced directly from Norway. The juicy and fragrant salmon is further elevated with mentaiko roe, crispy tempura flakes, and salmon roe, offering a delightful interplay of textures. Finally, the house-made soy sauce mousse ties everything together.
For the pasta aficionado, the Japanese fresh nori and mushroom pasta is a must-try. This dish showcases the beauty of Japanese ingredients presented in a Western style. A medley of three types of Japanese mushrooms — shiitake, eringi, and shimeji — dances with sakura ebi shrimp. The star of the show, however, is the use of fresh seaweed, rarely found elsewhere. Stir-fried with homemade butter, it infuses the pasta with an irresistible aroma and creaminess, making for a truly unique culinary experience.
The unagi crispy skin temaki is practically luxury on a plate. This meticulous dish is a testament to KINKI's dedication to detail. Fresh eels are steamed for over 40 minutes to remove moisture while preserving their inherent juiciness. They are then grilled over low heat with special charcoal, achieving a remarkable balance between crispy skin and melt-in-your-mouth flesh. The dish is then presented in a temaki (hand-rolled cone) format.
For the adventurous palate, the smoked F1 wagyu yukke offers an explosion of flavor and aroma. F1 wagyu beef, sliced into thin strips, mingles with the tangy notes of wasabi pickled cucumber, pickled head and feet. Pickled egg yolks and charcoal-grilled seaweed sheets add further depth, while the smoky essence of maple wood adds an unexpected yet delightful twist.
At the finish line, end on a sweet note with the Nashi pear tart. Imagine Japanese pears, stewed and infused with yuzu, ginger, cinnamon, and sake, creating a rich and complex flavor profile. This masterpiece is then enhanced with a touch of caramelized brûlée, culminating in a delightful play between creamy custard and sweet fruit.
Beyond the culinary delights, KINKI's ambiance is designed to transport diners to a vibrant and stylish haven. The interior boasts large windows, allowing natural light to bathe the space in warmth. Light-brown wooden furniture creates a sense of comfort, while the outdoor terrace, adorned with greenery, offers a refreshing escape.
