Jordy Navarra of Toyo Eatery in Manila and Aisha Ibrahim and Samantha Beaird from talked-about, but not-yet-open Axis are teaming up for an intimate dinner on Nov 30 and a casual garden barbecue on Dec 1 at the Sub-Zero and Wolf kitchen equipment showroom in Thonglor.

Toyo ranked no. 43 on the most recent Asia’s 50 Best list, making it currently the top restaurant in the Philippines. It helps that chef Navarra boasts some serious experience on his CV. He trained at Heston Blumenthal’s The Fat Duck in England and then later joined Bo Innovation in Hong Kong before moving back to Manila, where in 2014 he launched Black Sheep, a restaurant focused on modern Filipino fare. In 2016, he opened Toyo—a restaurant, according to Navarra, founded on rediscovering his Filipono heritage through culture, food and ingredients—to critical acclaim.

He will join the two Bangkok-based chefs, who have made a name for themselves through impeccable execution of sustainably sourced local produce, at their temporary home at the showroom. Look out for Axis when it does open: Ibrahim previously helmed the kitchen at Aziamendi in Phang-Nga while Beaird comes to the city by way of San Francisco’s highly rated Boulevard.

The dinner on Nov 30 is set at B4,000 with an optional tea and sake pairing, while the more laid-back garden barbecue is priced at B,2000, with drinks available for additional purchase. The menu has not been released, but we did get word of one special dish: braised abalone served with a sauce of its own liver and a porridge of three different textures with a variety of local chestnuts.
