Founder of the 3-Michelin-star Pierre Gagnaire in Paris to cook at Bangkok's Intercontinental
Pierre Gagnaire will be cooking a seven-course wine dinner for three nights at Intercontinental’s Fireplace Grill.
From Sep 2-4, French chef Pierre Gagnaire, whose eponymous Parisian restaurant holds three Michelin stars and is considered one of the birthplaces of fusion cuisine, is visiting Intercontinental’s Fireplace Grill to prepare a seven-course wine dinner at B13,500 per person.
Gagnaire is known for breaking the conventions of traditional French cuisine and creating innovative dishes as a form of art. He now owns multiple restaurants around the world, including London's much-praised Sketch, as well as venues in Tokyo, Hong Kong, Seoul, Dubai, Las Vegas and Berlin. In total, his restaurant portfolio currently holds 13 Michelin stars.
Some of his creations include grilled fillet of wild salmon from Adour poached in an infusion of camomilla, lovage and lemon, served with thinly shredded celery sticks, chervil, tomato hearts, grilled piquillos; Paris mushrooms, aspic of eel flavoured with Jurançon wine, zucchini flower/ewe’s milk yogurt and carob molasses; and marmelade of summer fruits and vegetables en amertume.
