Polish chef Bart Cywinski has taken the reigns at Hotel Muse, overseeing the kitchens of Medici, Babette’s The Steakhouse and The Speakeasy.

Counting experience at London’s The Grill at the Dorchester and, most recently, Singapore’s one-Michelin-star Jaan, Cywinski is tasked with taking Medici’s rustic Italian offerings in a contemporary Mediterranean direction.

Local, ingredients form the backbone of Thai-caught brown crab and tomato cannoli (B690) and slow-cooked organic egg (B350) with bellota, chorizo and porcini.

The hotel has also taken a hard line on unnecessary waste, replacing all plastic straws with metal ones.
