Teased last week by Siam Discovery, the cult favorite Brooklyn pizzeria, Roberta’s, is now open on its third-floor Flavor Lab — the first location in Thailand and the second ever to open outside the United States, following Singapore.

Now Bangkokians can finally grab a slice of owner Carlo Mirarchi’s famous “Bee Sting” pizza, the restaurant’s signature pie that combines drizzles of honey (the “Bee”) and bits of spicy cured meat (the “Sting”) with fresh mozzarella, tomato sauce and bits of basil.

 

 

The Michelin-starred chef is also the brains behind two of the top-rated restaurants on the New York Time’s “Best 100 Restaurants Best Restaurants in New York City 2024,” including Blanca (2nd overall) and Foul Witch (53rd overall). 

In 2007, Roberta’s started as a hipster grilled pizza joint in Bushwick, a northern area of Brooklyn known for its street art and converted warehouse businesses. Roberta’s itself started in a warehouse — with no heat, gas or even a liquor license.

 

 

“We were doing everything out of a little oven,” said Mirarchi during a recent press preview at Siam Discovery. “It was really challenging at first, especially getting people to come to where we were, but we kept chugging along.”

Today, the restaurant has expanded to 10 locations in New York and others across Los Angeles, Nashville, and Miami. Singapore and Bangkok are the only locations outside of the U.S.

 

 

“We make our own pasta, we make our own bread, charcuterie, as much as we can,” he said. “We have a pretty expansive menu, and we always try to incorporate local ingredients from wherever we are.”

On top of the honey-drizzled ’za, go for the homemade stracciatella cheese with bread, fall-off-the bone pork ribs, and succulent oxtail pasta. 

 

 

Knock it all back with another American classic: the Arnold Palmer — a non-alcoholic 50/50 mix of lemonade and iced tea named after the famous U.S. golfer. (A bit of trivia: the same drink with alcohol in it is cheekily known as a “Jon Daily”, a different American golfer famous for his booze habit.)

The restaurant isn’t only bringing its food game to town. Roberta’s is also known to be a bit of an art house. Graffiti showers the outside of the original warehouse, which an aesthetic matched in most locations to this day, including Siam Discovery, and it makes sense that Bushwick’s artsy vibe would be represented here. In Bangkok currently, you can catch works from American artist Jason Woodside and Spanish artist MURFIN.

 

 

The restaurant will also feature the work of two young-generation Thai artists, Artty Rock and Anar, who were selected from over 100 applicants and will show pieces in Bangkok before they are rotated to Roberta’s Los Angeles and New York locations down the line.
