La Scala's new face boasts experience in numerous Michelin-starred kitchens. 

The Sukhothai’s Italian fine-dining restaurant, La Scala, has a new chef, who brings with him experience in numerous Michelin-starred kitchens.

Tuscan-born chef David Tamburini previously worked at the one-starred Joia in Milan, and was also the chef at the helm to win the coveted stars at Ristorante Casa Grugno in Taormina and La Gazza Ladra del Palazzo Failla Hotel in Modica.

Now he aims to restore La Scala to its former glory. Take the polipo e patata (B850), which features grilled and sauteed octopus alongside seemingly standard potato—only when you cut it open you're confronted with oozing whipped potato. 

His newly-launched menu also includes the pretty chicken liver and foie gras pate on brioche served with sweet onion juice (B750), and spaghetti cooked in grilled eggplant water with ricotta cheese and Sicilian date tomatoes (B680). 

By comparison, the updated pizza menu is said to take a more classic direction, though fans of the restaurant’s renowned sandwich pizza schiacciatina (B790) can still get it just the same.
