Billy’s Smokehouse

You might know Billy Bautista from Osito Unique Spanish and La Monita. For his next venture, he's taking on barbecue. "It's totally American and totally different. We stay true to some traditions and mix things up when it makes a better dish," says California-raised Bautista, who's promising smoked beef brisket and short ribs cooked Texas style, coated only with salt and pepper and smoked for 20 hours using oak wood. There'll also be Kansas-style ribs, Mexican cornbread, smoked fish and even the occasional Japanese touch like smoked edamame. Find it late-August in Phloen Chit's Mahatun Plaza alongside the other Bautista restaurants.

Bunker

Defying convenient culinary categorization, this stylish eatery hidden behind a Brutalist concrete facade produces season-driven dishes that play with both Western and Southeast Asian flavors. Arnie Marcella, a native New Yorker, drives a kitchen that excels in foodie-wowing ingredients such as scallops with green strawberries and the foie gras dumplings, while drinks are augmented by Wareewan Yodkamol’s inventions—reason enough why the city’s fashionable still pack the stone-and-copper-touched dining room.

Touche Hombre

Hailing from Melbourne, Australia, this Mexican restaurant's slick, cocktail-bar atmosphere makes for an effortless transition from dinner to night out. Chilis and other fancy ingredients are flown in from Mexico, but it’s the the perfectly soft corn tortillas that almost steal the show. Have them with refined fillings like roast duck and seared foie gras—a delicious coming together of textures and flavors. The bar’s powerful tequila and mezcal cocktails often mirror the complexity of the food.

La Monita

At Sukhumvit’s enduring favorite for an after-work burrito and beer, the vivid decor gives every indication of the flavors on offer. For something like you’d find on the street in Mexico, go for the carne asada taco Mexi-style, with its tender, flavorful New Zealand rib eye steak and chopped white onion and cilantro on a pliable corn tortilla made in-house. The Cali-style version adds guacamole, salsa, sour cream and cheese.
