Dag’s mastermind chef Chalermpon “Van”Rohitratana—formerly Escapade, Burger and Shake, Rarb, and Namo—will be taking over Stock Room at Kimpton Maa-Lai Bangkok this Friday (Nov 25) and Saturday (Nov 26) 6:30pm.
 
The menu aims to showcase “borderless cuisine” where chef Van will be cooking dishes he never offered at any of his own restaurants using local seasonal ingredients. 
 
The eight-course menu offers dishes like shirako, one of Japan’s stranger ingredients, served with loysters marinated in fermented clam juice; Northern Thai-style tartare and fried Thai real white amadai fish; steamed chicken with Mexican-style galangal mole in banana leaf; and Chinese-style rice soup with catch-of-the-day and crab fat. For dessert are toasted rice cookies and ice cream served with young rice in coconut milk.
 
The special pop-up menu is B2,999 including soft drinks. Wine-pairings are available for another B1,800.
