These 10 restaurants prove classic French fine dining isn’t going anywhere
The French are still kings of uber fine dining
There was a time when foodie circles whispered Herve Frerard’s name in hushed awe. His former restaurant Le Beaulieu was Top Tables’ no. 1 entry in 2014. Today, he’s still making arguably Bangkok’s most decadently rich and flavor-packed French sauces at Aldo’s, together with old Le Beaulieu bistro classics like coq au vin.

Recently won third place in our Top Tables 2018 guide, this elegant red and black space has diners seated around a large open kitchen, a format more reminiscent of a sushi bar than classic dining a la Francaise. The food remains unmistakably French, though free range quail stuffed with foie gras and potato purée and with all the finesse you'd expect from Joel Robuchon, the chef with the most Michelin stars in the world.

Although this fine-dining bigwig hints at the Okura Prestige Bangkok hotel’s Japanese origins—your seared scallop comes in a miso consomme, the foie gras is flavored with yuzu gel, and a rich, sweet duck breast is marinated in soy—the techniques on show are classically French and bountifully flavorful. With its sky-high city views, Elements nails both classical refinement and creative flourishes.

One of the most respected chefs in Europe, the artistic Jean-Michel Lorain of La Cote Saint Jacques in Burgundy chose Bangkok as the setting for this “eclectic fine dining” experience, where top-notch culinary innovation won it a Michelin star last year. The kitchen, headed by chef Amerigo Sesti, gives French classics some Asian twists, while the dining room, run by Lorain’s daughter Marine, emphasizes a “lounge”-style feel accentuated by an unusual “upside down” interior design concept.

The name of this restaurant speaks for itself, as the menu revolves around truffle products from truffle paste and truffle-infused olive oil to truffle slicers and chocolate truffles. Step inside and watch kitchen staff in action through a large window while they cook Western classics like pumpkin soup (B200), truffle omelet (B720), truffle risotto (B950), pan-fried sea bass (B650) and veal fillet mignon (B3,200). You can also opt for more creative dishes by ordering a truffled panna cotta with mango sticky rice (B370).

This second-place-winner of Top Tables 2018 needs no introduction. For years it has set the standard for service and cuisine and the breath-taking river views aren’t equally exceptional. The Chef, Arnaud Dunand Sauthier, has worked for renowned chefs such as Georges Blanc in Vonnas, Marc Veyrat in L’Auberge de L’Eridan, and Emile Jung at Crocodile. Expect only the best imported produce, such as Challans duck, Brittany langoustine and French milk-fed lamb. The wine cellar, too, is superlative.

There may be more innovative French restaurants than this favorite of hi-so party types, but few offer such exceptional cooking at the price of Philippe Peretti’s seasonal set menus. Expect your roasted quail “supreme” or label Rouge pork belly confit to have been labored over by a chef-owner who’s almost always in the kitchen (except for when greeting guests post-meal). Go to enjoy the plush, turquoise silk wallpaper and imposing flock curtains, too.

The Reflexions presents a new way of tasting modern French cuisine. Michelin-experienced Chef Roxanne Lange creates dishes as appealing to the eye as to the palate. Focusing on awesome produce, flavors and textures are extraordinary. With its high-flying collage of monochrome ‘joie-de-vivre’ prints, blue back-lit cocktail bar, culinary theatre kitchen, the restaurant is at once edgy and elegant.

The group behind Savelberg has implemented a culinary mix of a basic and modern French cuisine. Chef-owner Henk Savelberg and chef de cuisine Rick Dingen are the culinary minds behind the food, and have combined their distinct cooking backgrounds together. This result is modern dishes with a basic touch. Because of both of their strengths are combined with a strong professional service team, they were awarded a Michelin star in December 2017.

With dark blue walls and a seawave-like ceiling that’ll make you feel like stepping inside belly of a whale, the restaurants offers both a nine course menu (B1950) and a la carte options like Canadian lobster bisque (B360), Foie Gras de Canard (B580), Whale’s Belly Consumme Royale (a golden, clear chicken soup with white truffle and brunoise, B300), Wagyu Chateaubriand (B3,950/400g) and scrumptious desserts like the melt-in-your-mouth couverture chocolate brownie (B240). Price-wise, this place hits the mark too.
