The only restaurant in town to solely specialize in grilled cheese started as a pop-up before taking up permanent residence at Rod Fai Market 2. Their doorstep-sized savory melt sandwiches are available in flavors including roast beef teriyaki (B165), barbecue pulled pork (B150), kimchi (B145) and triple cheese (B140). All are made using bread they bake themselves and served with a Belgian-style spicy sauce. They also offer sweet sandwich options like Mello Tella (Burnost cheese, dulce de leche, nutella and marshmallow, B105). Only open Wed-Sun.

Mainly anchored at the freshly-opened Wishbeer Home Bar (Sukhumvit Rd., between soi 63 and 65) while also moving around the city, new food truck Deli-Q specializes in Southern-style barbecue meats but also does a mean grilled cheese (B150) made Wisconsin-style from one of the American owner's family recipes. If that's not enough calories for you, also check out the Patty Melt (BTK), which throws a beef burger, bacon and fried onions into the mix. Check their Facebook page for updated schedule.

Even this wholesome, feel-good coffee shop is getting in on the grilled cheese action. You can stop pretending with the rocket salads and open-face affairs of pickled fish and rye bread now they're offering an indulgent cheese toastie (B195) made using fontina (a mild Italian cow's milk cheese perfect for melting) and truffle paste. It's served alongside a mini tomato-watermelon gazpacho soup—so it's not all bad.

This Roman-style Italian restaurant serves possibly Bangkok's king of grilled cheese sandwiches in the form of its mozzarella in carrozza with anchovy (B220). Not so much grilled as shallow-fried to golden-breadcrumb perfection, this decadent treat takes some beating when topped with a spoonful of Appia's beautifully balanced tomato sauce.

This is exactly the kind of food this New York-style Italian deli does best. Dean & Deluca's "Ham & 3 Cheese Melt" (B190) is made using liberal portions of sliced ham for that classic, bursting-with-meat deli sandwich look, in between which are layers of molten cheddar, emmental and gouda cheese. It's all served up between two thin slices of sourdough bread.
