Bronx Liquid Parlour, the cocktail bar of former Vogue Lounge bartender Hideyuki Saito, launches a new cocktail menu on Jan 25 with an oil concept—yes, actual oil.

There will be six new cocktails in total, each using different kinds of oil: Extra virgin olive oil, sweet almond oil, hazelnut oil, coconut oil, basil oil and grapefruit oil.  

The technique is different to the international cocktail trend for "fat washing," in which you add oil or fat to a liquor to impart its flavor before freezing the mixture so the oil can be removed.

"The idea came to me when I was experimenting," says Hide. "Basically adding drops of oil is like adding bitters but the oil affects the texture of the cocktail as well as the taste. You have to be very careful and use it correctly though, to prevent it from tasting gross."

During the semi-final round of the Bacardi Legacy cocktail competition Thailand back in Nov 2016, Hide also whipped up something with olive oil in it and landed himself a spot as one of the four finalists.

Come Jan 25, expect to taste some kind of an oily negroni called the "Negroily," with added sweet almond oil as one of the new six cocktails.
