Expect masterful French techniques from this former Robuchon chef. 

Ever since it first opened in the middle of the pandemic in 2019, Ekkamai’s French and globally-inspired restaurant Stage has amazed foodies with their new creations, now with its tasting menu upgraded to the 10.0 version (from 7.0 last year). 
 
It’s not just about the new menu. Former Robuchon crewmember Sainisa “Jay” Sangsingkeaw has cultivated her talented protege,Nonthabood “Arm” Jansawang, into the restaurant’s new head chef.
 
The new 10-course experience, Stage 10.0, sees Arm flex creative muscle and use his experience from culinary institutions like his six years at Suhring to steer foodies through a dining journey marked by conspicuous French influence and a dose of globe-trotting touches. 
 
Some of the highlights include the fresh white of French turbot topped with homemade curry paste made from red chilies and pumpkin shreds—strong and pungent as it should be, an inspiration from Arm’s childhood—tantalizingly juicy Australian A4 beef served with nori burnt leeks, and ragu de canard, featuring confit duck leg and complete with satisfyingly crunchy fried garlic and shallots. 
 
The 10 course menu is priced at B4,900 per person and the wine-pairing options include B1,700 for three glasses and B3,200 for 6 glasses. At least one-day advanced booking is required via 02-002-5253 or 083-623-4444.
