For B3,800, Vishanu “Bank” Prempuk marinates, smokes, and slow-cooks each of his ingredients with fastidious care over flavor wood fires. 
 
Almost everything takes more than nine hours of preparation, from juicy pork ribs and intensely rich ba kut teh and chewy squid tentacles smoked with bamboo leaves to his signature tantalizing lamb shanks and suckling pig with crisp skins smoked with longan wood chips and clad with homemade shoyu that can rival or upstage Chinese restaurants with ease.
