Fish sperm sac tagliolini, veal spinal cord skewers, and more at this interesting pop-up.

Phrom Phong’s semi-chef’s table Chenin is set to host an exclusive Italian chef’s table pop-up event from Mar 12-16 with the Italian chef duo Guglielmo Chiarapini and Francesco Capuzzo Dolcetta.

Both Chiarapini and Dolcetta are graduates of the ALMA Institute with impressive CVs, from the three-Michelin-starred La Maison Troisgros in Roanne, France to the two-star Michelin Da Caino in Tuscany, Italy—among others.

With their expertise in creating Italian-influenced dishes with seasonal produce and cookery over wood fire, expect dishes like veal spinal cord skewers, broad bean-guacamole cream and sorrel sea urchin, and milt (fish’s sperm sac) tagliolini topped with trout roe and rice vinegar tosazu.

The 10-course experience will set you back at B4,500 while the optional alcohol pairing starts at B2,000 per person. To reserve your seat, contact Instagram: chenin.bkk.
