Among the tantalizing dishes are his take on meia desfeita, a cod dish salad with blood orange emulsion, chickpeas and olive oil ice cream; piri-piri chicken with plankton marino; and arroz doce, Portuguese rice pudding spiked with honey, lemon and Kampot black pepper.
