If you’re looking for wine pairings, this is a can’t-miss one-off collaboration at Zanotti Il Ristorante Italiano this Mar. 23. Chef Federico Scalvini, the Zanotti executive chef, will be serving his authentic Piedmontese cuisine with a selection of wine curated by Kim Wachtveiti of Wine Garage. 
 
It’s all about fresh produce here. The four-course dining experience (B3,900) features two starters with roasted Carmagnola bell peppers with tonnato and parsley sauce and poached organic egg with barbabuc and polenta served with a hazelnut cheese sauce and bagna cauda hot garlic and anchovies dip; the three Piedmontese Toma cheese risotto with butter and black truffle; guinea fowl supreme with olives and shallots and guanciale with herbs and capunet; and Occeli’s cheese with fruit and grappa as well as hazelnut ice cream with Chivasso’s nocciolini
 
The price also includes four glasses of wine from artisan makers in both Alto Piemonte and the Langhe, including the 2017 Fabio Zamoblin’s Vallelonga from Coste Della Sesia and 2016 Davide Carlone Boca for the starters. The main course is served with refined 2017 Fiorenzo Nada’s Barbaresco, while cheese and dessert pair with a 2020 Az Agr. 499 Moscato. 
 
This one-off collaboration will be held at Zanotti II Ristorante Italiano, starting at 7pm. The event has limited seating for up to 25 people, so be sure to reserve in advance.
