Gaggan Anand Restaurant
Fresh off a very impressive showing at the World’s 50 Best restaurant awards in 2023, Gaggan Anand Restaurant seems to be going from strength to strength in recent years. The intimate 14-seating dining experience is three parts theater, one part rock and roll. Sit down, and the proverbial curtain rises. An open serving area roils with chefs tweezing garnishes into place in dark and red tones as storytelling on the history and pedigree of the dish is presented by a charismatic chef with the enthusiasm and sincerity of a self-help seminar—but in a good way. Defying description is a perennial hallmark for Gaggan, and with an obvious penchant for Indian flavors, the menu runs the gamut.

Den Kushi Flori
Hailing from Shibuya, Den Kushi Flori is a collaborative fine dining project between fine dining masters Zaiyu Hasegawa of Den (two Michelin stars) and Hiroyasu Kawate of Florilège (two Michelin stars) – specializing in Japanese and French cuisines, respectively. The venue features a U-shaped wooden counter encircling an open kitchen. With experience in both Japan and France, the talented chefs create five to seven-course tasting menus that combine French culinary techniques with the core flavors of Japanese cuisine, and include subtle Thai influences like a spicy watermelon sauce to reflect the local taste. A distinct showing of this can be seen in the rice cooked with corn, which is well textured and topped with teriyaki beef and the Fromage Blanc served with homemade ponzu sauce and three-colored seaweed along with wakame seaweed.

You enter a sleek, carefully appointed dining area, with a sort of bright south Indian feel that leans to tropical chic—the intimate lighting turning the white walls gold. Part of the appeal of Jhol is that it’s a relaxed atmosphere. The food is serious, but that doesn’t mean you have to be. The venue’s “Culinary Journey” tasting menu isn’t just referring to your palette. It’s a journey around the 7,516 kilometers of India’s coastline taking inspiration from Gujarat to Goa. The brainchild of the accomplished chef Hari Nayak. In addition to their wine list, don’t forget to check out this spot’s signature cocktails.

New York Steak House
For a proper splash-out dinner, there is nothing quite like the longstanding New York Steakhouse at JW Marriott Hotel Bangkok, with its huge handlebar platters, serrated knives and oversized chairs. Service is impeccable, as you'd expect in a five-star hotel, and the whole experience—gorgeous waitresses, Sinatra soundtrack, strong martinis—is everything you'd expect. All of the traditional steakhouse elements are on display here: Ceasar salads whipped and dressed tableside, an exuberant cuts of beef (think US Prime, Australian Wagyu, or Japanese wagyu), with seafood also leaning into the pricey imported size. If you are looking for those Manhattan steakhouse vibes, this is your spot.

Indus
This pioneering restaurant earned its stripes for transforming North India’s Mughal notoriously meaty and messy—but oh so delicious—dishes into a higher caliber of dining. Set in a sleek, renovated 60s-era art deco house, Indus approaches the classics with a deft hand, keeping spices subtle but flavors elevated to the max. They also use the charcoal tandoor oven to their advantage, working wonders on lamb chops, whole leg to mutton, and especially the venue’s signature kebab-e-malai, tandoori creamy broccoli, and freshly baked naan breads.

Wah Lok
Wah Lok Cantonese Restaurant has retained its spot in Thailand’s Michelin Guide for the past three years and remains Carlton Bangkok Sukhumvit’s Cantonese-Singaporean powerhouse. To this day, the award-winning restaurant is still one of the best spots in the city to try a combination of those two cuisines, which are rarely found paired here. High ceilings beckon diners inside while cream colored walls set a relaxing mood through Chinese-style landscape paintings. Singaporean native Lam Kok Weng helms the kitchen here, doling out favorites like the braised Boston lobster served with egg noodles, ginger, and spring onions. Similarly, the Peking duck and boneless suckling pig come out crispy and crunchy on the outside but oh-so-juicy in the center. The restaurant also boasts an impressively strong dim sum game in addition to the traditional à la carte menu.

Baan Pomphet
Bangkok food fans in the know will already recognize Baan Pomphet (which roughly translates to “diamond fortress) as one of the elite venues in the small city of Ayutthaya—which seems to be often reinventing itself as more than just a place to visit the old capital. The venue’s distinct red brick design fulfills its namesake by appearance, and connected to a boutique eight-room hotel of the same name means you have quick access to amenities like a pool and bar. If you come here, make sure you try the grilled river prawns and boiled freshwater snails in red curry—two of the venue’s absolute best dishes. The views of the riverside are largely unmatched for this level of dining in the area.
