Why go: Joseph Boroski did the drinks for half the best hotel bars in town, but saves the best stuff for his own little bar.
Drink this: There’s no menu. The mixologist asks you a bunch of questions and then serves you something that usually costs about B500.

Why go: Hideyuki Saito just ranked eighth best bartender in the world in the Bacardi Legacy competition.
Drink this: Oil cocktails, which Hide makes using techniques that remove any trace of grease. Try the Umami (B300).
