Celebrated Australian chef David Thompson—maybe best known for his ground-breaking work at Nahm in Bangkok—has joined hands with Cape and Kantary Hotels to set up Long dtai at Cape Fahn Hotel, a stunning property that takes over a private island just northeast of Samui. The Thai restaurant will spotlight fresh seafood with a focus on sustainable local ingredients—think southern-style grilled mussels; southern curry with minced pork and green peppercorns; and shrimp paste and prawns in betal leaves—all served on a deck with views overlooking the ocean.
