In their quest for authenticity, the team behind Ramen Suteiji (412/11-12, Siam Square Soi 6, Bangkok, 02-658-0588) traveled all the way to Fukuoka, Japan, for intensive training in ramen-making techniques. The result is the Hakata-style tonkotsu ramen (thin ramen in pork bone broth) served from the open kitchen of their simply-decorated Siam shop. Options include the Suteiji Special (ramen with chashu pork, soft-boiled egg and Hakata-style toppings, B230) and Tonkotsu Karamen (ramen topped with ground pork fried in special red sauce, B185), and you can even specify how soft you’d like your noodles.
