The second generation behind Northern restaurant Salungkham in Chiang Rai is now putting out a range of smoked meat products under the name Dear Chef (www.salungkham.com, 081-882-2619), available at supermarkets at Siam Paragon, Terminal 21 and Emporium. The young owners say they select only smaller pigs weighing no more than 70kg which they butcher themselves and smoke in a brick oven using oak that their parents grow. With the holiday season coming up, this all sounds very timely, indeed: prosciutto pancetta (order in advance), duck breast (B850/kg) and pork chunks (B209).
