Your chance to taste a raw and vegan Italian menu
Luce's chef has returned from a stint at the Living Light Culinary Institute in the USA.
For the third time, chef Edoardo Bonavolta is following his passion by rolling out a special raw and vegan menu at Luce. This time it’s even more exciting.
The chef went off to learn more about raw and plant-based cuisine at one of the highest-praised schools around, Living Light Culinary Institute in the USA, and returned with his own homemade vegan nut-based cheese.
Instead of basic vegan interpretations of Italian classics, chef Bonavolta’s new menu features more creative dishes like The Beautiful Mind (B280), which features raw sauerkraut, melon, blueberries, cashews and olive oil mayo with turmeric, flax and chia seed crackers, and mixed leaves—all ingredients that are proved good for the brain.
On the more classic side, we really like the chef’s take on the Caprese salad, dubbed “That’s not Caprese” (B320), made with fresh almond cheese, cherry tomato emulsion, raw pesto and home-dried tomato.
The menu is available for both lunch and dinner through Jul 15.
