* 250g of blue swimmer crab lump meat (easily found at any market)
* 75g mayonnaise (I prefer to make my own, but any American or European style mayonnaise is fine.)
* 1Tbsp Spanish capers
* 1Tbsp finely sliced celery
* 1tsp minced shallot
* 1Tbsp minced onion
* ½ Tbsp minced dill
* ½ Tbsp minced Italian parsley
* 1 squeeze of lemon
* A dash of red wine vinegar
* Salt and pepper to taste
* 50g rocket
* 2/3 tsp extra virgin olive oil
* A dash of salt and pepper
1. Mix gently in a bowl—being certain not to destroy the full, meaty texture of the crab while incorporating all of the ingredients and their flavors.
2. Place your rocket and olive oil in a separate bowl, add the dash of salt and pepper. Stir together gently and place on a chilled plate. Top the rocket salad you’ve just made with a healthy spoon of the crab, garnish and serve!
3. Now kiss the lady/gentleman that you love.
