Freebird's former head chef and Suhring's former chef de partie team up for ongoing popup series
A new venture for two promising young chefs.
Former Freebird head chef Pongcharn “Top” Russell and former Suhring chef de partie Michelle Goh are teaming up as Ter'ra for six month's worth of pop-up dinners at the Sub-Zero and Wolf kitchen equipment showroom in Thonglor.
Fans of Top's food at Freebird—where we named him Top Tables Young Chef of the Year 2018—will know to expect food that comforting and familiar, while showing off impeccable technique and telling stories.
Together, Top and Michelle will serve what they call "modern territorial" cuisine, which could broadly be explained as Western food made with 100-percent Thai ingredients.
Each month will see a completely new menu promising zero repetition. Prices range from B2,850-3,250 depending on the ingredients that Top and Michelle dig up.
These may take the form of a Ferrero Rocher-inspired snack made with 70% dark chocolate filled with duck pate and mulberry jam; or a delicate red cabbage risotto made with a variety of grains.
