PANDAN AND PISTACHIO AT SRA BUA (B300)

Chef Hendrik Yde Andersen’s take on lod chong (pandan cendol) for the new menu comes fashionably presented with warm Thai caramel for you to pour on a pandan white-chocolate disc, revealing below a cutely plated scoop of ice cream sitting atop lod chong, coconut and pistachio. The coconut cream served alongside it with some coriander lightens the otherwise rich treat.

Chef Carol Boosaba does some of the best cream in Bangkok, as reflected in her delicious mille feuille. Simple yet so sophisticated, the classic vanilla tart, made using chantilly cream and pastry cream, packs so much vanilla flavor without feeling at all heavy on your palate.

LADY IN RED AT JONA WAFFLE (B230)

Jona’s overnight yeast-raised waffle yields a crispier crust, lighter interior, and little trace of yeasty flavor. Just the waffle alone (B120) with some maple syrup is good enough in itself, but we also love this version with fresh strawberries, blueberries, yogurt honey, berry sauce and strawberry ice cream—super light and fresh.

Another Japanese cheesecake contender from Hokkaido, Snaffle’s signature mellow flavor comes served in a petite cake. They offer a few flavors, but for us the original one is best.

COCONUT ICE CREAM AT BAA GA DIN (B180)

Chef Chandler Schultz took inspiration from the coconut ice cream served as part of Sukhumvit Soi 38’s defunct street-food scene. His take on itim kai kaeng (ice cream with egg yolk) is far from simple, though. The adorable dish features toasted coconut ice cream with ginkgo nuts and rich egg yolk sauce, all balanced out by sour mango curd.
