New hawker stall A Noodle Story is now open serving Singapore-style ramen.

New hawker stall A Noodle Story (#01-39 Amoy Street Food Centre, 7 Maxwell Rd.) is now open serving Singapore-style ramen.

Setup by Shatec-trained chefs Gwern Khoo and Ben Tham—who have worked as top restaurants like Iggy's, Waku Ghin and Restaurant Andre—the stall puts out only one dish, Singapore-style ramen ($5/small, $6/medium, $7/large), which incorporates flavors from local dishes like prawn mee and wonton mee. The ramen broth includes both hae-bi (dried shrimp) and Japanese kelp.

Bulk the meal up with a choice of four side dishes ($3 each): Hot spring egg, Hong Kong-style wonton, cha-su—cooked in an immersion circulator for temperature control—and crispy potato-wrapped prawn. The stall is open from Monday-Friday, 10am-7:30pm.
