Hikiniku to Come is a hot Japanese Hamburg steak spot with four different branches in Japan, Taiwan, South Korea, and Hong Kong, and now they’ve opened their first Thailand spot on the 7th floor of Central World.
 
 
The team guarantees that the quality will stay on par to its original branch, using 100% ground beef patties, or hamburg, hand-shaped live and freshly charcoal grilled to each order.
 
Their refillable Japanese rice is cooked new every few hours using a traditional Hagama pot that ensures the rice stays fluffy and steamy for each serving.
 
 
Similar to the Japan headquarters, the layout of the Bangkok branch features a grilling station in the middle and counter seats arranged in a circle. Each station comes with a miniature grill securing the optimal heat. 
 
There’s also a tiny elevated compartment storing various sauces and pickled vegetables. If you look through the drawers underneath the table, you’ll find instructions as well as additional seasoning.
 
 
Their hamburg set (B590) comes with three beef patties served one by one. They recommend eating the first patty without any seasoning to taste the authentic flavors. The patties are 90 grams of high quality beef with a slight char on the outside that gives way to a satisfying tender, juicy bite. 
 
It's already on the salty side but you can dip it in some shoyu for a more layered complexity. The refillable rice is soft and slightly gummy and perfect to pair with their bowl of miso.
 
 
For the second patty, the restaurant serves thinly shaved daikon to drizzle with ponzu sauce—allowing the veggies to properly soak in the juices. Its salty-meets-tangy notes add a bit of variety and give the hamburg-on-hamburg line up a refreshing break. 
 
Here you can explore the other dips in the side compartment. We recommend the green chili pepper which adds a bit of richness with the olive oil marination or the eight spice Japanese chili that comes out more like a paste. 
 
 
The third patty arrives with raw chicken egg which can be cracked and eaten with the meat, but another popular way to have it is by stirring the egg into the rice and adding a bit of their pickled veggies.
