TAAN Bangkok’s New Year menu is a Thai gastronomic affair

TAAN Bangkok has just released their limited edition New Year’s menu, which continues to reflect the restaurant’s mission of proudly staying true to their Thai roots while delivering an innovative spin on classic cuisine. As always, guests can expect seasonal ingredients, soulful Thai flavors, and inventive cooking techniques and ingredient combinations.

Under the guidance of Chef Monthep “Thep” Kampolsilp, one of the highlights of their 16-course New Year Dinner is the pad Thai sorbet, which adds a tangy emulsified tamarind sorbet to the all-time favorite dish. To make the bite-sized lobster chae nam pla, lobster sourced from Ranong province is marinated in fish sauce and infused with a sweet bean mixture, and then served with a spicy seafood dipping sauce.
The menu also features a take on run juan custard, a dish that supposedly originated in the Thai palace during the reign of King Rama V. Since refrigerators had yet to be invented, and in order to minimize food waste, leftover meats from the royal banquets would be seasoned with shrimp paste and then made into a spicy curry. Chef Thep’s interpretation of run jun custard is served with poached eggs, and infused with tube snail oil stock, culminating in an aromatic and flavor-packed dish.
