SINGAPORE RESTAURANT

Mikuni

A decadent three-in-one Japanese restaurant with teppanyaki, robatayaki and sushi.

Fairmont's Japanese restaurant is a big, well-dressed space that elevates, not just covers, its bases with the teppanyaki counter, a sake/ sushi bar, an intimate live robatayaki station (our pick), in addition to the main dining room. At its helm is Korean executive chef Moon Kyung Soo whose kaiseki dishes are innovative yet restrained dishes, including a signature mushroom soup served in a siphon. Whatever you’re sampling here, it’ll be money well spent.

“Mikuni” means three countries, a nod to the Japanese restaurant’s three specialties: teppanyaki, sushi and robatayaki. Overseeing all three stations is executive chef Moon Kyung Soo. Set lunches such as the bone-in pork belly set ($70), Australian beef steak set ($70) and sashimi set ($90) offer a range of the restaurant’s best dishes at mid-day. Each meal comes complete with Japanese prawn crackers, salad and desserts such as espresso ice-cream. At dinner, order up a la carte favorites including the Mikuni chirashi ($90) and prawns with golden sauce ($40). Dine in a dark, striking space, with modern black, white and blue accents.
