Bangkok is jumping on the bone broth trend. From the U.S. to Australia, takeaway counters are springing up in dedication to this age-old cure-all.
Our first comes in the form of Genius Bar, a light and airy opening in Thonglor run by a young couple, one of whom is a health coach certified by Florida's Primal Health Coach institute and the other whose family-run farm in northeastern Wang Nam Khiao grows a wealth of veggies.
Bone broth is made by simmering chicken or beef bones in water over a long period of time, resulting in a nutrient-rich hug-in-cup whose health benefits supposedly include joint protection, reduced inflammation and a boosted immune system.
Here, they simmer their broths for 18 hours using bones sourced from small-scale cattle and chicken farmers known for antibiotic-free operations.
Aside from the hearty, rich beef broth or the lighter chicken broth (both B135/12oz), they also offer the Einstein Elixir (B135), a vegan alternative packed with earthy mushrooms like Lion’s Mane, shitake and oyster, as well as Chinese herbs for an amazing energy boost that coffee can’t give.
You can also select add-ins (B15 each) like turmeric root, ginger or fresh coriander, which are blended in on the spot.
Have your broth in one of the cool mugs they have on display or in a coffee cup to go—no spoon needed! An extended dine-in menu is in the works for the near future.
