This is probably one of the most anticipated new restaurants to open this year in Hong Kong. Popinjays, a fancy-schmancy new rooftop bar-slash-restaurant, sits perched on the 25th story of ritzy new hotel The Murray (www.niccolohotels.com). And If you’ve been to Hong Kong, you know how glamorous it looks at night time—the colorful lights and sound show reflect off the water in Victoria Harbour for a stunning scene.

Under the supervision of French native chef Didier Quennouelle, the culinary focus is on modern-European flavors, mostly French and traditional. The menu changes weekly, but what always remains is a stunning list of vintage Champagnes and wines (because you can’t really do French without them).

The restaurant sits within a glass-built pavilion which allows abundant lights to shine in, creating an airy space dominated by soothing grays, pale granite stone floors and marble table tops. 

Come evening time, the outdoor terrace offers puffy couches laid along the building's edge, as well as a bar with an extensive cocktail list.
