The Spirit of Aging dinner will put the focus on Mediterranean hams, with dishes including pata negra with slow-roasted tomato, artichoke and shaved aged manchego; Hokkaido scallop served with 36-month aged jamon serrano, jamon iberico, butter squash cream, and watercress foam; and saffron ravioli filled with 24-month aged prosciutto di parma in Beppino Ocelli butter sauce.

Each dish will be specially paired with Vesper's barrel-aged cocktails with titles like 'Jasmine,' 'Last Word' and 'Martinez.'

The meal will finish with Guanaja flexible ganache with fresh wild berry.
