Daniel Chavez is the head chef of Singapore’s Ola Cocina del Mar, an easygoing Spanish tapas restaurant with a reputation for produce-driven dishes with the occasional Peruvian influence (Chavez is originally from Peru). This Feb 17, he drops by Wonderfruit festival for what looks to be the food highlight of the festival: a seven-course feast with Gaggan Anand, Bangkok’s own two-time winner of Asia’s 50 Best Restaurants. Costing B3,000 a seat, it sold out within just two days. Here, Chavez talks about why now is an exciting time for Bangkok restaurants.
