At the recently launched open-air tapas bar and restaurant on Centara Grand's 54th floor, they roast up Cochinillo suckling pig on a Josper charcoal oven. The beast comes served traditional Spanish style: halved down the middle, perfectly salted and permeated with the flavor of fresh rosemary. It's rich, fatty, crispy and a perfect match for 2-4 people—making its B1,490 price tag something of a steal. Uno Mas takes over from Fifty-Five fine-dining restaurant, replacing the austere, starched white tablecloths with sharing tapas served amid a casual blend of bamboo ceilings and rustic sofas.

Islero

Also cooked up on a Josper charcoal oven (that's a brand of closed grill powered entirely by charcoal flames), the Segovian-style suckling pig at Islero is a more premium beast, with a price tag of B3,900 for half a piglet. Islero is Wireless Road's latest upmarket hangout, serving Spanish food created in consultation with a former hand at El Bulli.

3. Thyme

At this restuarant belonging to the family behind Siam@Siam, suckling Spanish pig comes served in an industrial glass box that ticks all the boxes: glass windows, metal frames, exposed brickwork, wooden tabletops. Their suckling pig costs just B520, and for that you get a solid handful of skin-on potato wedges.
